Tomato puree

Tomato puree is processed just like tomato paste but it is less concentrate.
Elvea tomato puree is made by fresh tomatoes that are gathered at the right point of maturity, strictly selected on the field to eliminate rotten, yellow or green fruits.
Tomatoes are washed, heated to facilitate the peeling and cut into very small pieces and finally sieved through three different kind of filter to separate skin, seeds and other kind of impurities.
At this point concentration takes place in a vacuum heating in order to lower the thermical damages.
Elvea tomato puree has a brix of 8% and appear dense, homogeneous in the structure, without granules or any fragments of leaves, skins or stalks of a good red, while taste is harmonious, not salted, overcooked, or bitter just as a real good product should be.
